Final Fantasy VII Remake was previously announced to encompass a number of parts, with little known about the exact number of parts, even with Square Enix themselves. However, the developer recently kicked development of Part 2 into high gear, so we can expect to hear more about the next part in the next couple of years (hopefully). However, it seems like Square Enix and the game's director, Tetsuya Nomura, may finally be settling on an exact number of parts, which they will probably announce soon.

In an interview with Famitsu (thanks, Twisted Voxel), Nomura talked a bit about his upcoming plans for the sequel and beyond. Development of the project seems to be going smoothly, and with all assets already in place from the first part, he wants to get the sequel out as quickly as possible (also considering Square Enix's reputation of taking several years, bordering on a decade, to develop games). He eventually stated that he hopes to share their future policy in the next update, meaning they may have an idea of how many parts it will be.
